Tokyo Last Call returns to Sushi-san’s Lincoln Park Dojo on October 8 with five Japanese bartenders over five weekends

Five Japan-based bartenders will take over Sushi-san’s Lincoln Park Dojo for five weekends this fall as Tokyo Last Call returns for its third season.

The pop-up is scheduled from Oct. 8 to Nov. 8 in the lower-level bar at Sushi-san, 2315 N. Clark St. Each weekend features a different Japanese bar and bartender serving a four-drink menu built around House of Suntory spirits, including Roku Gin, Hibiki Japanese Harmony, and Toki and Toki Black whiskies.

The series begins Oct. 8 through 11 with Hiro Nakayama of Bar Nayuta. Ryuichi Saito of Kyoto’s Cocktail Stand Furek follows Oct. 15 through 18. Rogerio Igarashi Vaz of Bar Trench takes over Oct. 22 through 25. Cole Nunley of The Bellwood is scheduled for Oct. 29 through Nov. 1. Yas Kawakubo of Punch Room Tokyo closes the run Nov. 5 through 8.

The lineup is entirely Japan-based, according to an event announcement, making it a more focused survey of Japan’s current cocktail scene than previous editions.

Tokyo Last Call was created by Chicago cocktail veterans Kevin Beary and Scott Kitsmiller, the team behind Three Dots and a Dash and The Bamboo Room. House of Suntory brand ambassador Davey Jones presents the series.

The Dojo uses a speakeasy setup for the event, allowing guests to watch the visiting bartenders work. A premium option called The Master’s Counter costs $145 per person and seats guests at the guest bartender’s bar. The experience includes three cocktails, a special Suntory cocktail, select bites from Sushi-san, and a behind-the-scenes look at the drinks’ inspiration and techniques. Gratuity is not included.

The 21-and-over pop-up is open Thursdays and Sundays from 5 to 11 p.m. and Fridays and Saturdays from 5 p.m. to midnight. Reservations are available through OpenTable and the Tokyo Last Call website.
